Hot: great with a full-flavoured and hoppy India Pale Ale or lower carbonation beer like a stout or porter.

Mild: lighter beers; lagers or pilsners with a crisp finish and smooth taste.

Suicide: always a dark, full-bodied beer like a stout, porter, sweet flavoured ale (honey, maple cream, nut brown).

Buffalo: pale ale, cream ale and amber ales all work differently depending on the bite of the sauce.
